This is a special built-in field that only exists in the following tables: Tasks, Opportunities/Projects, Leads, and Customers. The Assignee relationship also appears in the Contacts and Product Details permissions, referring to the assignee in the linked Customer and Opportunity tables respectively.
This allows you to set permissions based on multiple relationships to that table.
