The length of the field
When adding a custom field the system requires me to enter the length of the field. Shouldn't I just put in a big number to always stay on the safe side?

No, because you may run out of room in that table. A database has limitations on the maximum amount of a bytes a single record can take. Watch the "Remaining size of records" stats in the Custom Fields window and make sure you aren't running out of room.
