Can I delete the predefined user roles the system comes with?

I am building a solution to manage sales teams. How can I restrict each sales rep to see only their own data?

Is there a limit to how many user roles I can define? What happens to a user that his role changes ?

What would happen if I gave a certain user role permission to change data in a table but then I set some fields in that table as read only? Isn't there a contradiction between permissions based on roles that regard a whole table and specific field properties?
